Description
A plant with several different uses, borage stalks, flowers and leaves have a mild cucumber like taste. The plant grows rapidly and starts producing large amounts of blue flowers used as decoration in many dishes. The leaves can be used in salads, yoghurts, cream cheese fixtures and with shellfish. Borago leaves are hairy and older leaves are usually cooked to counteract the stiff hairs. Younger leaves can be used without cooking.
